If we are going to meal prep/cook up something special, our favorite time to do it is #Sunday. Grab the ingredients for our Curried Kuri Squash recipe and try it yourself! - Ingredients
1. Kuri Squash
2. Olive Oil
3. Salt & Pepper to Taste 4. 1 tbsp. Curry Powder. Procedure
1. Heat oven to 350 degrees.
2. Using a cutting board and chef’s knife, slice the squash in half down the middle.
3. Remove stem and root ends.
4. Scoop seeds with a spoon (Optional: Set the seeds aside for roasting).
5. Slice the squash into 1” thick “planks” & proceed to cut into cubes.
6. Add squash cubes to a bowl with olive oil, salt, pepper, and curry powder. Toss to combine season evenly.
7. Spread the squash in an even layer onto a parchment-lined baking sheet and bake at 350 for 15 minutes.
8. Remove the squash from the oven and toss with a spoon. 9. Replace the squash and let cook for 20 more minutes. Once done, squash should be easily pierced with a fork.
10. Serve while hot, and enjoy! #projecthappie
