My healthy post workout meal. Made a guacamole mixed with avocado, sour cream, mustard, and some adobo for taste. Added it on whole wheat toast with cheddar cheese, onions and tomatoes and salt and pepper on top.it was so delicious 😁

Quick easy dinner tonight! Pesto pasta with sautéed cherry tomatoes topped with homemade vegan parmesan and a side of homemade garlic bread

This pesto from Trader Joe’s was BOMB and i didn’t even have to make it myself 🤤 topped it with cherry tomatoes sautéed in olive oil, garlic powder, sea salt and crushed red pepper and also some ground basil. The parmesan was super easy, just 3/4 cup raw cashews, 3 tbs nutritional yeast, 3/4 tsp sea salt and 1/4 tsp garlic powder in a food processor until smooth. Store in fridge. For the garlic bread i mixed olive oil, minced garlic, garlic powder, ground basil, sea salt and nutritional yeast to taste, brushed on both sides of a multigrain bread and baked until warm and then broiled for about 5 minutes with the oven cracked to crisp the crust!!!

Had some leftover pumpkin so I made these pumpkin muffins! They taste so great with peanut butter 🥜. Recipe is as follows~ < 2 cups of oats blended into flour + 1 cup of pumpkin purée 🎃 + 1/3 cup honey or maple syrup + 1 egg + 1tsp baking powder + dash of nutmeg and cloves + 1 tsp cinnamon + pinch of salt > mix together wet ingredients in one bowl and dry in another and then add the dry to the wet! Bake at 350 for 23-25 min!

Between the amount of sushi, avocados, burritos, quesadillas, quinoa, kale and green smoothies we consume, I feel like we are such stereotypical Southern Californian eaters...but the truth is, I wouldn't want to be eating anything else! 😋 It's funny how where you live can dictate the foods you crave...we lived in New Haven, CT for 2 years while my husband was in business school and the closest thing they had to the food we loved was"Tex-Mex" and "plant-based sushi" (actually so good), but it just didn't cut it! We'd come back to So Cal on breaks and binge on all the foods we missed, that and the sunshine! 🌞 What are your favorite foods? .

ALMOND FLOUR HEALTHY-ISH HAMANTASCHEN! ✡️

In honour of Purim coming up this week, I figured I’d take a shot at baking one of the childhood snacks I grew up with around this time of year! For those of you who aren’t familiar with these, HAMANTASCHEN are filled pocket cookies / pastries that are traditionally eaten on Purim. They’re made with white flour & are often filled with poppy seed, prunes, dates, raspberries, apricots, chocolate or cherry!

These babes are my take on a cleaner version! I swapped the white flour for almond flour, cut the sugar content & swapped it out for some organic coconut sugar & filled ‘em with some organic @worldofchiajamraspberry & blackberry chia seed jam (made with just chia seeds, cane sugar, berries, lime juice & no added pectin, fillers, preservatives or artificial colours or flavours).

They came out so CRUMBLY & PERFECT & most importantly, SO SCRUMPTIOUSLY DELICIOUS! I am hooked! 😍 The jam adds just the right amount of natural sweetness to balance the nuttiness of the almond flour & I also threw in some lemon zest for a bit of citrusy zing! I can’t wait to share the recipe with you guys! Stay tuned - it’s coming to the blog! xx 😘
