Handful Frozen cauli
1/3 banana
1 Teaspoon maca powder
1 tbsp cacao nibs
2 tsp cacao powder
2 heaping tsp @88acres chocolate sunflower seed butter
1tsp maple syrup
1/2 cup unsweetened almond milk
1/4 tsp vanilla
1 tbsp rolled oats
topped w sunflower seeds, cacao nobs, and oats ✨

Last night's Taco Thursday was what dreams are made of. Triple decker #vegan tacos on corn tortillas (holla at my #glutenfree folk). These tacos are the perfect weekday dinner because ☝🏻 they're delicious and ✌🏻 with a tiny bit of #mealprep they take less than 15 minutes to whip together.
#Recipe: Meal Prep: soak chopped green and yellow pepper (one of each) in 1 cup of water and 2 tbsp of lemon juice up to 24-hours. Prepare lentils using 1 cup of lentils and 1 cup of vegetable broth + 1 cup of water + pinch of salt. Bring lentil mixture to a boil then cover and simmer for 40 minutes, until all liquid is absorbed. After lentils are fully cooked season with 2 tbsp of cumin + 1.5 tbsp of chili powder, S+P to taste. When ready to prepare, drain peppers of all but roughly 2 tbsp of lemon/water mixture. Add peppers and remaining water to a skillet on stove top + 1 cup of shredded Brussels sprouts. Cook covered on low-medium heat, for 10-12 minutes, stirring occasionally. On toasted corn tortillas, add guacamole mixture of your preference (here, I made my own with 1 mashed 🥑 + 2 tbsp of cilantro + juice of 1/2 a lime + pepitas + S+P), add lentils on top of guacamole mixture, add pepper/brussel mixture on top. Top with cilantro and serve with lime! Enjoy! #plantbased

Back in Brew City for one last night as a Milwaukee resident. 🙋🏻 Not even the least bit ready to let this apartment go, but I feel so grateful for getting to spend several amazing years transforming in this space I called home. Not only for the views, location, and endless natural light. But for the stuff you can't see. Often we attach a physical object to materialize things and memories we can't touch. This apartment represents so much of that for me. The exact amount of pain and suffering, and joy and triumph that happened here can only truly be known to me and the walls that make up this place. So much happened here. But I'm comforted knowing that more than I can possibly imagine still lies ahead. So onward we go, into the unknown. But first, one last night to celebrate all we tuck safely in the past. ✨

-1 cup frozen blueberries
-1 tbspn of almond butter
-1/2 cup almond milk
-1/2 cup water
-1 scoop of chocolate protein
*option to add more ice, I personally like mine❄️🌨☃️ Hence the extra frozen berries on top🙈

Oatmeal bowls will definitely be making a comeback cause of how good this one is😇👅👅 got these cinnamon almond milk oats (3/4 cup oats, 1 cup almond milk, tsp. cinnamon. Happy Friday everybody!!! Yesterday I made some of these sweet potato fries following @beazysbites story tutorial and they turned out sooo good. Boy knows how to cook some sweet potatoes. I ate half yesterday and then threw the rest into a yogurt bowl (also inspired by @beazysbites and his incredible yogurt bowls). Now mine may not look as good, but it tasted amazing!!! It had been to long since my last sweet potato yogurt bowl. Definitely need to make them more often!! The rest of my Friday will be spent working, but I'm off tomorrow and have a fun outdoor adventure planned! Hope you guys have a great Friday!!
