Chia raspberry parfrait anyone?? 🍓⭐️
As usual I prepared this glas yesterday evening💚💚 For the chia pudding I mixed raspberries, almond milk 🍼and  dates together in my smoothie maker and put it in a glass🍴 with a cup of chia seeds to soak in the fridge overnight🌙

The white layer is a coconut whipped cream🙀👅🌟🌟
Just grab a can of full-fat can coconut milk ➡️ place it in the fridge overnight➡️ a great tip to make the perfect cream, put a mixing bowl in the freezer for approx 5 minutes🕜
➡️You only need the hardened coconut cream so just pour out the liquid of coconut milk. (You can use it for smoothies or anything else)👍
➡️Scoop the coconut cream into your chilled bowl. ➡️ whipe the cream with a mixer and add a bit of vanilla powder😘😘 Pour it in a glass togehter with the chia pudding and some roasted oats. 😊💚☀️ You can top it with fresh sesional fruits if you like🍌🍍🍓🍉🍒🍊 Do you have any inspirational vegan breakfast you would like me to try?😘😘😊😍 This evening I will meet with my friends after work 🍸to discuss about all the news 😊

My baby sister is in town - woohoo! She is the bringer of all things good: foremost herself, kids' aunt, news from home, kids' favourite meat floss, and bags of matcha! She also brings with her nostalgia for mom's cooking. One of mom's great dishes is pork belly buns/gua pao, which I LOVE and of which I can consume infinite quantity. Yesterday I made it with twists to the original Taiwanese version, which would wrap the melt-in-your-mouth pork belly, pickled mustard greens, fresh coriander leaves and sweetened peanut powder in clam-shaped fluffy white flour buns.

Chiao's fusion Taiwanese pulled pork and slaw tacos:

Fill tacos with slaw and pulled pork. Sprinkle with peanut powder and top with fresh coriander.

Pulled pork: Bake boneless pork shoulder in soupy marinade of water, soya sauce, sliced ginger, crushed garlic cloves, honey, and Chinese five spice in 150 degs C for around 6 hours. The pork would be so tender it would just pull off.

Slaw: Mix thinly sliced red cabbage, cucumber, celery, carrot and deseeded large red chilli with some apple cider vinegar, sesame oil and dash honey.

Peanut powder: Ground roasted peanuts and mix with dash ground salt and dash coconut sugar.

Soft "taco": Mix 50 g almond meal, 50 g tapioca flour, dash salt, 1 tablespoon of virgin coconut oil and 2 eggs. Cook as thin pancakes on non-stick pan and gently fold immediately into taco shell shape, which will set as pancakes cool.

I've always struggled with bouts of food boredom. It annoys me that I get hungry several times in a day. Why can't we just eat once a day or once a week and it be enough? It's exhausting to constantly have to think of meals to make and eat. Lately it's been really bad and nothing at all sounds good. However, I forced myself to go to the grocery store yesterday to get some stuff for the week. I didn't go with any ideas or any list, which is so rare for me. I ended up piecing together some meals while I aimlessly walked through the building. This super simple meal was such a hit for me. I was so excited all day for it and it hit the exact right stop. Roasted potatoes with loads of spices just wrapped in some Bibb lettuce and dipped in yellow mustard. Honestly this was the best meal I've had in weeks or maybe months🙌🏻🙌🏻🙌🏻 #brittneyeats2k17 #vegan

On current wellness philosophy:
“I truly believe that balance is the key to maintaining optimal mind-body health. I went from not working out at all to being obsessed and doing 2-3 workouts a day! I would eat healthy from breakfast to dinner, then find myself wanting to sneak downstairs to binge on food! I was working out more, but I was still treating my body unfairly. I cut down on exercise and now workout 6 days a week (Zumba, barre3, orangetheory fitness, heavy lifting) and allow myself at least one full rest day. I make sure I go to bed at a reasonable, scheduled time, and now I do not restrict my calories as much as before. I try to eat mostly unprocessed, whole food and allow myself an occasional indulgence.

I've made it a practice to think of the things I am grateful for in my life every day, and it has helped me appreciate things more. I workout for myself, my family, my future kids, and I workout for all those people who physically cannot. I workout because I have been blessed with a healthy body and mind, and I show my gratitude by using it to the fullest.”

Just wrapped up this book and let me tell you... I needed this one in my life. 👌 The "slight edge" really comes down to one thing, CONSISTENCY. ✨ The philosophy of the slight edge can be applied to any area of your life: your health, happiness, finances, relationships, etc... It takes a great deal of patience and belief to remain consistent in these areas. #thestruggleisreal 😂 You need belief in yourself and patience knowing that your consistency WILL pay off in the long haul.

I have been working hard on applying this philosophy to many areas of my life and I'm starting to see the progress! I'm in better shape now than I was 5, 3... heck even 1 year ago thanks to consistency. 💪 I'm building a coaching business along side my full-time job thanks to the consistently of getting up just a little earlier each day to build this business of my own. 😘 #bossbabe

I'm working on applying it to other areas of my life as well. I'm committed to always learning, always growing and I think that's the beauty of this journey we're on. 💖 I love sharing it with all of you because maybe my journey can inspire just one person who needs it.

Paleo Chicken Katsu | Brandy Coconut Cream Sauce | Crispy Asian Brussel Sprouts

Had a crazy delicious meal at @momofukulasvegas a few weeks ago and one of my favorite dishes was their Chicken Katsu with Mushroom sauce. Decided to recreate it and put my Paleo spin on it and it turned out delicious!

I used @ottos_cassava_flour and Aleias Gluten free and Dairy free Panko Bread Crumbs for the Chicken Breading.
.
The sauce consisted of Coconut Cream, Shallots, Brandy, and Mushrooms. I created a tasty sauce for the Brussel Sprouts and cooked them two ways.

BEYOND EXHAUSTED TODAY 😩 That being said, I took a 3 miles walk, did both Arms & Abs AND Legs & Cardio, and did some weight training and stretching with my girls at the gym. I also got to enjoy the vegan pumpkin banana muffins I made last night as well as my homemade dry roasted soybeans. Yum. Now off to shower, watch Bates Motel, and 😪😪😪
