♨️Mostarda cremonese ♨️Il termine "mostarda" fu usato per la prima volta in un testo francese del 1288; allora il mostum ardens veniva usato per conservare più a lungo possibile la frutta, che veniva immersa in una poltiglia composta da mosto cotto e farina di grani di senape, poichè si era scoperto che la senape aveva proprietà conservanti. Attraverso gli scambi commerciali, nel Seicento, la mostarda arriva ad essere conosciuta anche in Piemonte e da lì si diffonde un po' in tutto il Nord, soprattutto nelle città attorno alla Pianura Padana, come Cremona o Mantova, anche se con diverse varianti e ricette a seconda delle zone. Il gusto della mostarda italiana cambia a seconda della tipologia, generalmente ha un sapore molto deciso, lievemente acidulo e più o meno piccante. Quella di Cremona è la più piccante di tutte, quella di Mantova la più dolce.
