While it’s sometimes hard to accept the end of something, I listened to two @ted talks today (thank you for the recs!) that gave me new strength to believe that all endings are really just beginnings of something better. 💥 • First: Living Without Limits by @amypurdygurl 🙌🏻 Amy lost both legs at 19. What seemed like (and, in fact, was) the end of her life as she knew it became the beginning of an exhilarating, meaningful, successful new life, albeit without legs. She loves her new life so much, she said she wouldn’t change what happened to her legs, even if she could. Now THAT is inspiring. Thank you Amy for sharing your story. 🙏🏻 • Second: The Surprising Science of Happiness by Dan Gilbert 🙌🏻 Dan starts by explaining a study of two groups of people: people who won the lottery, and people who became paraplegics. (If you could choose to be in one group, which would you choose? Lottery, right? No brainer.) Well, as it turns out, one year after these life-changing events occurred (lottery or paralysis) the PARAPLEGICS WERE HAPPIER than the lotto winners. 😳 What may have seemed like the end for the paraplegics was actually the beginning of a glorious new existence. ✨

If I had to pick one thing to eat for the rest of my life, there’s a pretty high chance it would be chili 🤤 which is pretty funny because P won’t touch it with a ten foot pole 😂 MORE FOR MEEE 😬 I made this bean version, but feel free to add or substitute a can of the beans for ground meat of your choice! Chili is super versatile and forgiving, and also gets better with time 😍

Bean chili👉🏻 Sauté 1 small yellow onion until translucent. Add sliced peppers + 1 can of diced tomatoes + 1 can of black beans and 1 can of chickpeas + fill 1 can of water + 3T chili powder + 2t cumin + 2t paprika + 2t oregano + salt to taste (I also added cayenne because I like things spicy! 🌶️) Simmer for 45 minutes, served with quinoa, avocado, cilantro and jalapeños

•Chia pudding: in a jar mix 1/2 cup plant-based milk with 2 tbsp chia seeds, 1/2 tbsp maple syrup, and 1/4 tsp vanilla extract, stir well, let sit for 5 minutes, stir well again, place in fridge for 1-2 hours.
•Fresh sliced kiwis
•Pink soft serve: in a high speed blender add 2 ripe frozen bananas and 1 packet of @pitayaplus (add a little plant-based milk if you don’t have a high speed blender)

Just found out yesterday was #NationalHotSauceDay! What a coincidence because on Sunday after church, I went to pick up a few things @wholefoods. Since they had such a nice selection of peppers, I decided to give homemade hot sauce a go. I roasted a pound of mixed peppers-serranos, habaneros, jalapenos, & fresnos (not easy to find in these parts)with about 8 whole cloves of garlic, a pint of ripe New Jersey grape tomatoes (or 4-6 ripe tomatoes) dependingvon size) and a couple of tablespoons of a good Spanish olive oil on a sheet pan at 350 degrees for 20-30 minutes or until the skins start to brown, turning them after 12 minutes. Put that all into my @vitamix and let it rip, adding 3/4 c. apple cider vinegar, 1T Himalayan pink salt, and 1/2 c. of filtered water until blended smooth. I removed all the stems before roasting but kept all the seeds. It was HOT! Then I lined a fine mesh colander to get all the small bits and make it completely smooth.You can adjust to your liking and even remove seeds before roasting for a milder hot sauce. I tried a recipe for vegan lunch meat. Not bad! It had good flavor. Made a sandwich with some chipotle mayo, tomato, arugula, avocado and Dijon mustard. Delish.

Middle of the Week Vibes with this Chunky Monkey Moringa Smoothie Parfait

4 ice cubes
4 dates
3/4c cashew milk

This is thick enough for a smoothie bowl.
