I was a single Mama for the night and I was just so happy with my kiddos, which is a rare moment, so I have to share. First of all, my daughter had a super mature and sweet moment. She remembered me preparing notes for a meeting with my boss and on her own accord, asked how it went! Then while I was making dinner, I simultaneously set off the smoke detector and was dripping blood from my previous beet incident. They hopped into gear and headed to the hallway as asked, letting Mama take care of the madness. They gobbled up the taco bowls at dinner, including cabbage, peppers, quinoa, and carrots, and asked for thirds! We had a lovely time with some Legos, baths, and in bed by 8:30. #momwin ❎3️⃣🤛

How can you turn a kid meal like tacos into a sophisticated weeknight meal? Roast some veggies, like this purple cabbage, and add a sauce, like a yogurt dressing. Look in the produce section for yummo flavors like cilantro lime and blue cheese and save on 50% of the calories and fat, but still have tons lf flavor. •

My three year old daughter followed directions, didn't hit anybody and didn't throw her shoes today at school. So... I'm celebrating with tacos. Make them ➡️➡️ organic corn tortillas, @aldiusa grass-fed beef with taco seasoning from Practical Paleo, Mexican coleslaw and roasted peppers and onion.

2 yogurt griego @lacteospasco a la licuadora, y agregamos gelatina sin azúcar, previamente disuelta en 200 ml de agua y listo, ahí salen 2 porciones 🍶🍓🍒

También a parte usé un yogurt griego sabor coco de justo y bueno + 1 sobre de gelatina en 100 ml de agua, también de fresa la gelatina, con esto sale 1 sola porción 🍓💕
.
La gelatina que usé es de @dietycolombia 💕💕💕
.
Y listo, son comidas ideales para cuando estamos alcanzados con la proteína, o para meriendas, para cuando gusten, 🍓💕💪

Raw vegan mango cheesecake 🙋🏽‍♀️😃😋 Recipe:
Base - 1 1/2 cups raw almonds, 1 cup dates, 1/3 cup shredded coconut, 1tsp vanilla extract blend in high power blender, lay out in cake form, set in freezer

Middle layer - 2 cups of cashews soaked and drained, juice of one lemon, 1/3 cup rice malt syrup, 2 tbsp coconut oil, 1 cup skinned zucchini, blend in high power blender, use half of it for the first layer, lay out in cake form and leave in freezer for 2 hours.

Top layer - add a cup of mango (ripe) and a tsp of turmeric (for colouring) add on top and leave in freezer for another 2 hours, take out 20 min before eating... yummy 😋 Enjoy!

Vegan Pizza with a sweet potato/oats crust 👌🏽😋🍕
Takes a little while to make, but this deliciousness would last me for 4 days with a salad accompanied 🥗

Recipe:
Base - 500gr of steamed sweet potato with skin on, 2cupsof oats, 2tbsp of flax seeds. Mashed together and shaped into a fairly thin base. Wet hands so the dough isn’t to sticky ☺️ 20 min in oven (185C)
Layer - mushrooms, red onion, capsicum, spinach, tomato paste, crushed garlic olive oil and spices (oregano/Italian allspice), sprinkle vegan mozzarella on top and another 12-15 min in oven
Yummmm! Enjoy!!

Overflowing and melting 😂 all the really good stuff included! I am big fan of good quality supplement lately as I have clearly noticed energy improvement on all different levels, mentally/physically with them! Especially being on the go all the time it’s so hard to keep your body re-fueled the right way... some of my favourites are: açai, maca, good old magnesium, spirulina, collagen peptides (thanks to @_itsbridget_ Who put me on to that) and charcoal. I try and take most of them them on a daily base, which sounds like a lot, but my body loves it! What are your favs and why? Ok I have to brag for a moment on my last minute random concoction.... it’s healthy and delicious, vegetarian and can easily made vegan and best of all I think it’s the most delicious combo of flavors
Sauté one fennel bulb with salt, pepper, garlic and oregano
Add zest of one lemon
Add zucchini noodles
Add juice of one lemon
Sauté until slightly soft
Add artichoke hearts and continue to sauté
Top with Feta cheese (or omit this if vegan/find substitute)

#Motivate con mi plato de hoy 👇🏻
📣Colchón de quinoa roja, #zuchinni salteados con salmón a la plancha al limón .
🐟El salmón lo prepare a la plancha con limón y el zuchinni rallado lo salteé con fritolín y #ciboullette que me encanta. .
🍛La #quinoa roja por si no la conocen aún les cuento que tiene pocas calorías, es rica en proteínas y es altamente nutritiva. Es la que contiene menos grasas tiene y es la más alta en carbohidratos, lo que la hace un excelente alimento para deportistas 💪🏻 Si queres comenzar a consumir la quinoa es importante hacer un lavado previo de las semillas, frotando las mismas suavemente con las manos, bajo el agua, de manera que se quite la capa de saponinas que recubre las semillas y que de quedarse allí, aportaría un sabor amargo 🤭
Posteriormente hervimos tal como si fuera arroz, por 15 a 20 minutos o hasta que se abra la semilla. Colamos y listo para usar .

Simple is how every Wednesday dinner should be. The only question is do you spoon it into your mouth or just drink it? 🤔 :

The creamiest 20 Minute Tomato Soup
- 2 Tbsp coconut oil (olive oil)
- 2 Tbsp butter
- 1 sweet onion
- 28 oz carton crushed tomatoes in juice - 1 1/2 cup chicken broth
- 2 bay leaves - 1/2 unsweetened cashew milk (soaked cashews, heavy cream or coconut cream)
Salt and pepper, to taste
:
Heat oil and butter in skillet, add onion and pinch of salt. Cook until soft.
Add tomatoes in juice and bay leaves and simmer about 10 min.
Remove from heat, discard bay leaves, pour in a blender with the remaining ingredients and purée until smooth.
