Turkey burger!

Mix 24 oz of ground turkey with 1 tsp kosher salt, 1/2 tsp freshly ground black pepper, 1/2 tsp onion powder, and 1/2 tsp dried tarragon. Form into 4 patties and cook in a cast iron skillet on medium high until gb&d (only flip once, but rotate 180 degees once per side). Once browned, put in a 350F oven until the internal temperature hits 155F. Remove to a plate, cover with foil, and let rest for 3-4 minutes.

I like my homemade burgers to be simple, so I just use a toasted bun with mayo and fgb pepper, and a piece of green leaf lettuce for texture. I like the Udi's classic hamburger buns.

Sorry about that. This banana bread was baked in my typical @lecreuset loaf pan, but the recipe (from @delish #DamnThatsDelish) I used this evening ordered me to line the pan with parchment paper then blast it with @pamcookingspray, and the result was a beautiful shade of brown, the kind I want my skin to have as I risk melanoma during my summer sojourns at the beach at Robert Moses State Park.

The last keg of Maillard Reaction Imperial Stout has cracked! It's been a great run but we're ready to make room for a couple new brews next week. Fortunately we have a small number of 650ml bottles remaining at the bottle shop. If you store these bottles properly they will be excellent cellar brews to break out in the years to come. We've wax dipped and tucked away a few cases for next year and can't wait to set up a vertical!

Yesterday was our 13th wedding anniversary. So lucky for us we got babysitter's for the 3rd time in 16 months and we had a fabulous night out.
I want to thank the incredible staff @lenarestaurante for an absolutely amazing meal and the surprise Deus! You spoiled us rotten! 👌🙏❤️ Guys, check this restaurant out if you haven't already, amazing Argentinian food inspired by none other then @chefanthonywalsh's mother in law. The empanadas, croquetas and the housemade mozzarella are to die for! 😋
We then went to the @craftbeermarket to check it out and have a pint, I had the @godspeedbeer India Pale Lager. Then a quick stop @cestwhatto for a pint as well, where I had @kensingtonbrewingcompany Maillard Reaction. We'd never been to either of them and we had a really great time, we shall be back again that's for sure.
Lastly, we finished off the night at my favourite @bellwoodsbeer I missed the Cherry MOG release 😢 however I was quite happy to get to try it on tap. Also had to have the current Runes on tap as well, which was even more incredible! 😍
It was a wonderful evening and the best way to celebrate 13 years with this guy @kev.beers 🎉🍻❤️

연휴의 마지막날 집에서 휴식과 함께 로스팅 관련 자료들을 찾아보는중.
커피의 로스팅은 아직 멀었다고 생각하는 부분과 이유는 기본적 개념이 재대로 자리 잡히지 않고 기계를 중심으로 하는 ‘방식’이 이론 또는 정설처럼 자리 잡은것.
아직도 로스팅 자체에 대한 이야기가 아닌 사용에 따른 경험담 수준이 이론으로 착각하는게 커피 로스팅의 한계이다.
Toast - Bake - Roast 에 대한 이해는 메일라드 반응이라는 부분으로 이미 오래전부터 지금까지 상당한 연구가 되어 있다.
다만 커피라는 부분으로는 정말 일부만 참고될뿐.
@modcuisine 에서 커피를 깊이 있게 다뤄줬으면 좋겠다.

In @ruby.tandoh book Eat Up she talks about baking and cooking and encourages to think about what actually happens when we cook! As a chemist I agree with her there really is no better reaction in cooking then the Maillard reaction making that crust on the bread we all love! No Galentine's Day is complete without the best kind of waffles - Mickey-shaped ones!

The brown color of waffles (and chocolate and pancakes since it's also #pancakeday) is a result of a chemical process called the Maillard reaction. Donald Duck fans have no need to worry; this has nothing to do with mallards.

For the Maillard reaction to occur in waffles, carbonyl groups from flour and amino acids from eggs and milk products like butter must be present. When the batter reaches approximately 300 degrees Fahrenheit, the carbonyl groups (composed of a carbon atom covalently double-bonded to an oxygen atom) combine with the amino groups (composed of nitrogen and hydrogen atoms) of amino acids. Several reactions follow the carbonyl group and amino group combining and eventually lead to compounds called melanoidins that give waffles their brown color. But the steps in-between involve many potential chemicals that give foods their different possible flavors. However, the exact formula for waffle flavors are actually under-researched and not yet precisely characterized. Somehow even without that research, Disney has found a perfect recipe.
