i’m back! 👋🏼 and desperately in need of rest and some time in my own kitchen resetting my system after being away for 11 days 😭 i’m trying to do @whole30 again for realsies this time 😉 and this first meal to kick it off was a delicious, easy start! also....
🚨 NEW @traderjoes product alert: ❄️🥕🌀 frozen carrot spirals! they’re in the pasta section of the frozen food aisle and they’re GREAT! 🙌🏼 I just tossed them on a baking sheet and popped them into a 450 oven for 10-15 minutes and that was it! then threw them into this skillet with the rest of my veg 🤙🏼 literally the start to finish of this meal took like 15 minutes. going to make a few tweaks but the recipe should be coming soon! 👍🏼

Smoothie bowl number 2! This awesome orange banana coconut smoothie is super delicious! I put in (oats, vanilla protein powder, vanilla Greek yogurt, coconut water, about 2/3 cup of fresh coconut meat, 1 medium banana, fresh turmeric, half an orange peeled, 1 lemon wedge peeled, some orange rinds) yum!! Peanut Butter and Banana Muffins with carrot or cauliflower 🍌🥜 Prep: 10 min • Total: 35 min • Makes 12 muffins
Ingredients:
1 cup firmly packed dark brown sugar
1/2 cup natural peanut butter
1/2 cup carrot or cauliflower purée
1/2 cup banana purée
1 large egg white
1 cup whole-wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Nonstick cooking spray
Directions:
1. Preheat the oven to 350 F. Coat a 12-cup muffin tin with cooking spray or use paper baking cups.
2. In a large mixing bowl, mix 1/2 cup of the brown sugar with peanut butter, the vegetable and banana purées, and the egg white, using a wooden spoon.
3. Put the flour, baking powder, baking soda, salt in a bowl and mix well. Add to the bowl with the peanut butter mixture and stir just to combine ( the batter will be a little lumpy- do not over mix). Add the remaining 1/2 cup of brown sugar and stir once or twice.
4. Divide the batter among the muffins cups and bake until lightly browned and a toothpick comes out clean when inserted into the center, 15 to 20 minutes.
5. Turn the muffins out onto a rack to cool. Enjoy 😋!!!
6. Can store in a airtight container at room temperature for up to 2 days or wrap individually and freeze for up to 1 month.

Sooooo... 💕 Yesterday I caved and ate a chocolate and olive sourdough on top of my 1500 cal plan 🥖. Mid-week weigh in today and I’ve already dropped 800g since Monday, a total of 2.8kg in 9 days. I’m not starving myself, I’m drinking 2-3L water each day, and cut back on exercise given my arm flare up last week. The LDL-C myth: When we go to a lab to measure our LDL-C (the “bad cholesterol), 95% of labs uses an indirect way to measure it called “Friedewald Formula”. This formula was develop in 1972 in a small study with only 448 people. Yes, 448 people. This very small study generated a formula that is widely used by multiple doctors to analyse if you are healthy or not (and should or shouldn’t take statins). 🤔
Objectively speaking, what is the problem with this method? It’s error margin is HUGE. I’m not talking about 5-10% error margin. I’m talking about 20-30%, sometimes even more. Not to say that for some especific cases it’s totally innacurate (for high triglicerides for example). 🤔
The fact is that this exam is outdated and should not be used by doctors anymore. Don’t believe doctors that uses this exam to decide if you are healthy or not. You better find another one.
