Sometimes even if your intentions are to help others and do good you can still loose yourself. sometimes I have to remind people & myself that I am human, that I am not perfect, that I can still fall back into old habits: and let judgmental shit slip out of my mouth, or still struggle with self-acceptance, self-love, self-trust and confidence. Shared a little Gross National Happiness and slow change love with the Endeavour Wellspring Magazine. I love how much the experience and GNH has evolved for me personally even since then. For those of you who aren't aware, traditionally Bhutan is known as the medicinal closest of the East, rich in Indigenous medicinal plants. Bhutan also is one of the few places in the world that favours traditional medicine over/alongside allopathic treatment options in hospitals available to the public. The preservation of culture, using nature to restore and maintain health and wellbeing through sustainable, holistic health is inspiring.

Earlier this summer I'd come up with a quick dressing that is definitely share-worthy

We eat a lot of salads and other fresh meals, focusing around vegetables and between us and my in-laws there is always tons of veggies to get creative with. Originally, this was made on-the-fly to pair with a spicy fish taco, but instead of fish I used cauliflower and tossed it with chilli-garlic sauce mixed with hot sauce then roasted it in the oven until it was crispy

I've been making this a couple of times a week because it's delicious, lunchbox friendly & incredibly nutrient dense. Whilst the kids are on school holidays I swapped the tahini for @byronbaypeanutbutter and it's so yummy πŸ˜‹
MUESLI SLICE

PREP TIME: 5 MINUTES
COOK TIME: 20 MINUTES

INGREDIENTS
-
1 cup oats
Β½ cup wholemeal spelt flour
Β½ cup organic raisins
Β½ cup dried cranberries, goji berries or blueberries
Β½ cup cacao nibs
Β½ cup sesame seeds
Β½ cup pepitas
Β½ cup shredded coconut
125g butter or ΒΎ cup coconut oil
Β½ cup brown rice malt syrup
2 tblsp tahini

INSTRUCTIONS
1. Preheat the oven to 170 degrees celcius.
2. In a bowl, mix all of the dry ingredients together.
3. In a small saucepan over a low heat, melt the butter or coconut oil with the brown rice malt syrup. Mix through the tahini and then remove from the heat.
4. Stir the melted butter/coconut oil through the dry ingredients until well combined.
5. Line a slice tin with baking paper and tip in the slice mixture. Use your hand to pat it down so that it is nice and even.
Pop the tray in the oven and bake for 20 minutes or until the slice is a darkish golden brown.
Tip:
When you take the slice out of the oven, straight away use an egg flip to gently push down the mixture. This makes it nice and firm so that when you go to cut it, the slice won’t just crumble. To prevent it from crumbling, the slice also needs to be cool before cutting.
Job done.
*tip completely cool the slice before cutting.

🍴Cocer la coliflor, escurrirla bien y dejarla secar.
