This brothy soup looks simple, even austere, at first glance. But, many hours of simmering and knowledge went into this #grassfed Beef Broth with Scallions and Mushrooms. First the bones were roasted to a rich and deep color. Then I created a rich broth with onion, #ginger and #nori. The broth needed more oomph, so I seared a little more of the beef trimmings and used that #fond (browned bits that remain in the pan after searing) to enrich the broth even more. Mushrooms were seared as well - that liquid packs an #umami punch - and in that went too. It’s all about building flavor with the elements of the dish at hand. Skim the fat, strain, check flavor again. Add the mushrooms, more #seaweed (nori) amd scallions. A simple dish, well made, with attention to detail like an #hautecouture suit. And also, delicious. I'm one to always try and use every last bit of an ingredient. I hate anything going to waste. We had some left over sourdough bread that my kids weren't able to finish before it went stale so, instead of throwing it out, we turned it into French toast muffins! Cut the bread into chucks and soak in an egg and milk mixture. I added a pinch of salt, some cinnamon and maple syrup to mine! Shove into greased muffin tins and bake for about 15 minutes at 350 deg f. Easy! #personalchef #eugeneoregon
