(oat)h my goodness, this warm bowl of oatmeal was everything my morning needed + Jesus + coffee, of course! This bowl was full of protein @vitalproteins, natural saturated fats (which are increases the healthy cholesterol and helps covert the "bad" cholesterol into good cholesterol), Vitamin C, fiber, and anti-inflammatory properties.

The last few months have not been about good food for me. As a Certified Holistic Nutritionist, I pride myself in helping others find their best self and being comfortable in their own skin. Part of doing this is leading by example, which I have not been able to do as of late.

I chose to veer off my road through difficult times. Instead of taking care of myself I sabotaged myself with bad food (that tasted oh so good), I stopped working out and I returned to some old bad habits like smoking 🙈🙈. Although this may have temporarily helped emotionally, I was left feeling mentally and physically fatigued. I felt defeated.

The bad news is that it takes time to rebuild things. The good news is that I have the drive to get myself back to a place where I feel good about myself. Feeling defeated and actually being defeated are different.

Meal prep for me needs to be simple and quick as I don't always have time for a huge process with family, work and training. My go to Ground turkey, green beans and my latest comfort mashed cauliflower. Adding spices and vegetables like peppers and onions to change the taste will keep it from being boring. Meal prepping for fullness! This weeks salad Is totally vegan, packed with fiber and protein! 🥙🥗
. . • Prepped 1 cup of #wholesomepantry Farro boiled in 3 cups of @pacificfoods low sodium vegetable broth & divided into each salad (1/4cup portion)
. • handful of almonds for protein
. • 2 handfuls Kale for base
. • shredded red cabbage
. • ~6 slices cucumber
. • handful (or 2) chopped carrots
. • Dressing : 2tbsp balsamic vinegar and 1 tbsp EVOO, eyeballed those measurements. So good, so nutritious, so filling!

Another meal prep is going. 👩🏼‍🍳 This time meal is higher in protein and lower in carbs than the previous one. 💁🏼🍗 Once again, super simple, basic but absolutely tasty. 🤤You will need:
Chicken fillets - 600g
Frozen carrots – 230g
Onion – half of a big one, 93g
Garlic cloves - 2
Frozen broccoli – 450g
Frozen garden peas – 180g
Cannellini beans – 1can; 246g drained
Fresh mushrooms – 170g
Single cream – 250ml
For seasoning I’ve used Maggi chicken stock cube, ground black pepper, Tandoori curry spice, garlic powder, cayenne pepper, turmeric, smoked paprika, dill, parsley and pink Himalayan salt.
Altogether, I got 4 meals. Per meal:
430kcal
protein 47g
carbs 21g
fibre 11g
sugars 6g
fat 16g
I’ve put this meal into ‘MyFitnessPal’ as ‘LPWA Chicken with frozen veggies & cannellini beans in cream’ (LPWA – Lean Physique With Augusta). Cut chicken into about 2cm size cubes, throw them in a pan with the lid on and cook over medium heat. We are not using any oil at this point, so you will need to stir it quite often. Let it fry until it’s just about to be done and add all the frozen veggies (carrots, broccoli, peas). Mix it up and while it’s cooking, chop the onion, garlic cloves, mushrooms, open the beans can. Then throw everything into the pan. Add cream and spices and cook over medium heat until it’s done! 🍑💪🏼
