😍 Chia smoothies

INGREDIENTS:

This will make two small jars
Layer 1: Chia pudding

1 cup almond milk (or any milk of choice)
3 tablespoons chia seeds
1/4 teaspoon vanilla extract or powder
1/2 tablespoon maple syrup (or your favourite natural sweetener)
Layer 2: Valentine smoothie

1 frozen banana
1/2 medium size red beetroot
1/2 cup mixed frozen berries of choice (I used strawberry, blueberry, blackberry)
1/2 tablespoon raw cacao
1/2 cup unsweetened almond milk (or your choice of milk)
Toppings (optional toppings): Few blueberries and blackberries

DIRECTIONS:

Mix all the chia ingredients together and stir well. Allow to soak for at least 30 minutes stirring well to avoid clumps (best overnight in the fridge).
To stick fruits/veggies on the side of the jar, cut the fruit/veggie really thin and make sure the glass is dry.
Blend all the smoothie ingredients.
Layer the two and top with any toppings you like.

SHEET PAN SHRIMP BOIL

Ingredients: 1 pound baby Dutch yellow potatoes 3 ears corn, each cut crosswise into 6 pieces 1/4 cup unsalted butter, melted 4 cloves garlic, minced 1 tablespoon Old Bay Seasoning 1 pound medium shrimp, peeled and deveined 1 (12.8-ounce) package smoked andouille sausage, thinly sliced 1 lemon, cut into wedges 2 tablespoons chopped fresh parsley leaves

DIRECTIONS: Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time; drain well. In a small bowl, combine butter, garlic and Old Bay Seasoning. Place potatoes, corn, shrimp and sausage in a single layer onto the prepared baking sheet. Stir in butter mixture and gently toss to combine. Place into oven and bake for 12-15 minutes, or until the shrimp are opaque and corn is tender. Serve immediately with lemon wedges, garnished with parsley, if desired.

INSTRUCTIONS: Avocado Dressing: Place the ingredients in a small food processor and whizz until smooth. Use MILK to adjust consistency, and adjust salt to taste. (Note 1) Spice Rub: Combine ingredients and scatter on a plate. -
Chicken: Slice into 4 - 5 thin steaks on the diagonal, then coat both sides with Spice Rub. Cook Chicken: Heat oil in a large skillet over high heat. Add chicken and cook both sides until dark brown.
