To make The Tunnel Piper, from American Bar’s Coast to Coast menu, whisky is mixed with liquorice bitters, cacao vermouth (whole cacao nibs are rested with aromatised wine to add a slightly more savoury chocolate note), lemon juice, roasted barley syrup (to add richness), apricot liqueur and egg white. The name Tunnel Piper also refers to when the tunnels below and surrounding Edinburgh Castle were discovered and a piper was sent down to explore. The Shire Cocktail from American Bar has one very interesting ingredient, roasted sunflower honey. Sunflower seeds are slowly roasted and then infused into honey water. The honey is then blended with whisky, raicilla and cider to create this beautiful and elegant cocktail. ⠀

'Due to the increasing need for steam engines to be fuelled, the demand for coal in the 19th Century rose dramatically, with England being the world’s largest coal producer for a period of time. Communities were born around coal mines and cultures created. This was at times hard, but vital work calls for a drink with a backbone of staunch character.'⠀
