Early morning @hellofreshau delivery today. As I live solo, the meals I get cover me for lunch and dinner. ♀️ So today it’s a salmon feast - Almond crusted salmon and rosemary potatoes with dill-parsley mayo. Delicious! The only thing I added to the recipe was some finely sliced lemon to the salad. The way they set out their recipe cards is so great. Super simple! This is no way a paid post, this is just a girl that’s developed a recent love for this company Two more meals to try out in the next few days
Are you a flip once or flip multiple times kind of person when cooking a steak? I flip every 30 seconds on high heat. 🥩 This steak is medium rare and only cooked from room temperature for 3 minutes and rest for 2. Nail it every time Simple side salad is snow pea shoots, avocado, tomato, balsamic and olive oil,Salt and pepper and trying a delicious @tamarvalleytruffles mustard from @lamanna_and_sons
I used to always reach for fast food post a large night out...But nothing speeds up feeling good again than nourishing your body with good foods. As tempting as ordering online can be when you’re not feeling fresh, there’s no better feeling than making a yummy nourish bowl, saving money and not feeling guilty. - Sweet potato chips, avocado, @slendier noodles, @nutiiboost , beef meatballs, spinach and rocket leaves, kewpi mayo, seeded mustard and mango chutney. Yum.
Confession: This isn’t my dinner this evening as I’ll be heading to a best friends house and getting some take away after a long week. But this is similar meat free version to my last post with the curried broccoli salad (recipe in last post) and I added in the zucchini noodles. It was a delicious meat free meal that I can’t wait to make again Have a great weekend all. I’m flying up to Cairns tomorrow morning and staying 4 days with family. Can’t wait
🥦 If you want a new way to eat broccoli, give this a go! I was inspired by a broccoli salad I ate in California that you can buy at Whole Foods Kitchen. Nice plateful of goodness here - gluten free, dairy free, refined sugar free Slice and grill the broccoli (with a little bit of oil) so that it gets a very slight char to it but still remains it’s fresh crunch
Mix up in a bowl 3 teaspoons of whole egg mayo (homemade preferably or a sugar free one, also vegenaise can be used if you’re vegan) add one scant teaspoon of curry powder and one teaspoon of organic Dijon mustard (also check to ensure sugar free) - adjust the balance if needed. Mix the grilled broccoli in with the dressing then top with sultanas, slivered almonds, fresh chilli and salt and pepper. The sultanas give it a slight sweetness that really makes it! You could even add more toppings like some pumpkin seeds, sesame seeds or sunflower seeds for extra crunch! I served mine with some grilled garlic prawns as my source of protein.
This is cooked and served within 30 minutes. I sure do love simple, fresh, wholesome cooking

I can’t take much credit for this delicious meal. ‘Honey mustard chicken with pumpkin roast vegetable toss’. Yes I did cook it but ingredients and recipe are from @hellofreshau ! Great if you want to skip shopping and recipe searching but you still enjoy cooking and want instructions to follow. Weirdly though I did discover a chunk of rockmelon in with my pumpkin when I was cutting the veg up it was lighter in colour and not as solid, I tasted it and sure enough it was fruit and not veg. Thanks @alyce__ann for donating this meal set for me to try since your week night schedule is so jam packed

I’m hooked on nourish bowls for meals I live solo so one of the main reasons I love to post about the food I make is so that I stay creative with my meals and don’t get bored cooking for one! Great way to get plenty of greens in and start the day off well! Green smoothie bowl: vanilla protein, almond milk, organic vital greens, matcha powder, fresh spinach leaves, half avocado - topped with mixed seeds and @nutiiboost daily blend. I am doing my first plasma donation this afternoon so my day is jam packed with good wholesome meals
Bit of a change tonight! Cooked up this delicious dish. Gluten free, dairy free, sugar free and tasty as anything ! Grass fed organic beef mince/mushrooms/green beans/slendier noodles and a delicious Asian soy/chilli sauce. Cook and serve under 30 mins! ...and yes...my chopsticks are shaped as drumsticks fun and practical
I have a bit of a theory...the more colourful the meal the tastier it is not to mention nutritious! this is dinner tonight for me ♀️ grilled turkey breast with a colourful salad of: rocket, baby spinach leaves, iceberg lettuce, zucchini ‘noodles’, tomato, chickpeas (cooked in a pan with olive oil, apple cider vinegar, turmeric, salt and pepper), chopped dates, black sesame seeds, pumpkin seeds, sunflower seeds, fresh chilli. Dressed with a miso lemon dressing, some plain coconut yogurt and an amazing (no hidden nasties) olive tapanade. Yum yum yum.

Taste the rainbow breakfast plate. Turmeric and cumin tofu scramble is one of my fav things to cook up for breakfast. Inspired by the recipe in @gwynethpaltrow cookbook ‘It’s all good’ but I just added some Tumeric to them other ingredients on the plate are fresh baby spinach leaves, cherry tomatoes, basil, almonds, soft boiled egg, miso dressing and some fresh nectarine to finish with. Could make this dish vegan without the egg but I wanted the extra protein and I’m not vegan ♀️
Another day, another home made nourish bowl. Now listen, I know sardines may not be on the top of many peoples grocery list but I happen to enjoy them. Not only are they one of the cheapest forms of protein, they’re one of the best sources of omega 3 fatty acids too! Yummy brain food!! Now I also want to mention the pumpkin. I roasted this in curry powder, olive oil, apple cider vinegar and Himalayan salt and it’s just scrummy! Then there is brown rice with quinoa, 5 bean mix, kale, cherry tomatoes , lemon
Smoothie bowls are great for lazy mornings and afternoons in this heat This one of mine features: Vanilla WPI, Macca powder, blackberries, frozen banana, magnesium powder, frozen açai - blended up in my Vitamix! Then topped with: chia seeds, fresh banana, almonds, sunflower seeds, shredded coconut, fresh mango and cacao powder.
Asian bowl: Perfect for lunch or dinner with minimal effort. You would know I like cooking salmon but sometimes I like to have it raw. Here is udon noddles with kale, sweet potato, firm tofu, lemon, sesame seeds and raw salmon. Dressed with miso/lemon juice and mirin. You can make it ahead of time and serve it all cold or have it while the sweet potato, tofu and noodles are still warm.
Lunch! So...I had a craving for pasta but didn’t want the gluten...And I had a craving for a warm creamy potato salad but wanted something not so high in calories to the traditional one... and hey PRESTO! May I present you with this warm potato-ricotta-bean salad with PESTO! ingredients: boiled baby white potatoes, blanched green beans, basil, olive oil, smooth ricotta, sunflower seeds, garlic, parmesan, lemon juice, finely sliced lemon, black pepper, Himalayan salt. Delicious! (Note: I usually use pine nuts in my pesto but for a lower calorie option I chose to use sunflower seeds today. Still a nutty flavour and gives the same texture. I don’t feel so guilty at all with this yummy plate as my lunch!)
So I do not have a name for this salad. Maybe I can call it the ‘what-chya-got’ salad. as it was made with what ever I had in the fridge or pantry. Get ready for a long list of ingredients...(drumroll please)...kale, roast pumpkin, sun-dried tomatoes, bacon, mango, almonds, sliced kalamata olives, salt and pepper shallow fried tofu, fried capers (best thing ever), chia seeds and dressed with olive oil/apple cider vinegar/freshly ground salt and pepper Anyone that says you can’t win friends with salad has never met me Here’s to beginning 2018 on a healthy start
Let’s be real...I am about to knock off work for the week and I haven’t just cooked this today. (I will most likely eat cheese and wine for dinner ) But I cooked this earlier this week and it’s so easy and probably a great hangover meal for those of you getting lit this weekend. So I’m posting it right now. I just love pasta but now and again I’m not too naughty and have the gluten free kind. These are Barilla gluten free ‘elbows’ and I laughed out loud when I read on the box that they were called that. This is Basil pesto but I added to the traditional pesto... in a pan I cooked up garlic and chilli in some olive oil, then I stirred in the basil pesto adding extra Parmesan and cheddar and a good spoonful of goat milk yoghurt and the juice of half a lemon and stirred it over low heat until all combined. I then added in the cooked pasta and then when all combined I cracked a raw egg over and stirred it all through to make it extra creamy. I then garnished with fresh chilli, spring onions (scallions) Parmesan, freshly ground salt and pepper. Delicious. Happy New Year to my lovely followers. This is my last post of the year. I’ve been a bit sick on and off this week. I find the best way to make me feel better if I have a sore throat and feel a cold coming on is to make up an Asian style chicken noodle soup. Quick, easy, fresh and nutritious! My soup features rice noodles, sugar snap peas, garlic, chilli, ginger, chicken, chicken stock, coriander, spring onions, soy sauce
In spirit of Boxing Day/cricket/Boxing Kangaroo... I am eating Kangaroo...Not sure if wrong ...Today for lunch is this incredibly aesthetic Kangaroo rainbow salad . I personally think Kangaroo is delicious but it’s not everyone’s cup of tea. It’s an incredibly lean source of protein and as long as you know how to cook it correctly then it will be tender and delicious. Coat the fillet in your preferred cooking oil and a good grind of salt all over. Ensure you have a very hot pan! Cook it rare then wrap it in aluminium foil and let rest for the same time as cooking. If you skip the resting period you may end up with quite chewy meat. In my salad is kale (massage with olive oil so it’s easier to digest), sugar snap peas, sesame seeds, sliced cherries, cherry tomatoes, roast pumpkin, crushed peanuts - dressing is olive oil, fresh lemon juice and balsamic vinegar. Dress the kangaroo with a spoonful of tztatziki and freshly cracked pepper. Let me know if you give this colourful, healthy creation a go!.. Aussie, Aussie, Aussie, Oi-Oi-Oi !
Today’s lunch Sesame butterflied Chicken thanks to a super quick and easy @jamieoliver recipe. Fresh, healthy, gluten free! Could also be made to be dairy free. I actually used @caprilac goat milk yogurt in the sauce, so this was free from cows milk dairy. To be honest I am super lazy tonight and haven’t cooked myself a thing yet... this is a gluten free gnocchi with pesto sauce I did at the start of the year. It’s pretty much what I’m dreaming of eating right now but I am exhausted and don’t want to go to the grocery store it’ll inspire me to cook it on Saturday though !
What do you call cheese that isn’t yours? Nacho cheese!! I love how easy nachos are to make. And I usually make mine with leftover mince that I’ve made for Spaghetti Bolognese that I have previously cooked and frozen. This giant serve did me for two meals! Dinner and then lunch the next day. Of course it’s always much more fun sharing with someone hope this inspires some people to whip up some Nachos! Also a tip of mine: before it goes in the oven, drizzle a nice big swirl of sweet chilli sauce over it so it melts together with the cheese. Amazing! No knife to be enticed to lick here... just fingers
So I’ve decided from here on out I will only be posting my own cooking. (Like the lovely fresh vibrant ones in this post). I will not be doing anymore food posts of cafes or restaurants. In terms of features, I will be happy to feature produce/ingredients and chefs of any recipes I do. I love to feature products from small businesses and Australian based products and chefs. (But that doesn’t mean I won’t be featuring chefs or products from overseas). The majority of my most popular posts are my personal cooking ones, which is great as that’s what I am most passionate about. Thanks to those who continue to support this hobby of mine
One of the easiest things to do when you want to eat healthy but not spend much time in the kitchen is to put together a ‘nourish bowl’ - tonight I’ve got raw kale, zucchini spirals, cucumber spirals, grated carrot, 4 bean mix, avocado, plum tomatoes, grilled salmon and roasted eggplant and pumpkin which I finished off in the same pan I cooked the salmon. Also added some hummus and tzatziki on the side. Yum
