So in addition to being ridiculously excited to host my first #Galentines Party, I’m EXTRA excited because I recently discovered @Tossware – it’s basically the classy adult version of the iconic red plastic cup we all grew to love in college! They’re 100% recyclable, they have the look and feel of glassware but, they’re shatterproof and toss-able! I used them for my Hazelnut Cappuccino Panna Cotta …nommy nommyy nom nom

½ Cup Fat Free Milk
½ Cup Light Cream
¼ Cup Organic #Hazelnut Spread
¼ Tsp #Cinnamon
1/8 Tsp Salt
1 packed unflavored gelatin
½ Tsp #Espresso
1 Tsp #Vanilla Extract

In a small saucepan heat the milk and heavy cream over low. Whisk in the hazelnut spread, cinnamon, salt and espresso. Let simmer for about 2 minutes until well combined. Whisk in the gelatin and vanilla extract. Strain then pour into your tossware container or ramekin then refrigerate until firm (about 4 hours or so). DEVOUR!

1 Box @ExploreCuisine Organic Chickpea Fusilli
1 Tsp Avocado Oil
2 Small or 1 Large Yellow onion – sliced
2 Tbsp Minced Garlic
2 Celery Ribs – Sliced
2 Carrots – Peeled and sliced
1 Parsnip – peeled and cubed
1 Turnip – peeled and cubed
2 Green Scallions – Sliced
32 ounce Vegetable Stock
16 ounce Water
1 tsp Cumin
1 tsp Paprika
1/8 tsp Salt
1 Tsp Black Pepper
1 Tsp Garlic Powder
1 Red Bell Pepper – Cubed
Handful of Parsley
1 pound Spinach (I like to be extra fancy and julienne but rough tear works as well)

In a large stock pot over medium high heat add the avocado oil and lightly sautee the onions, garlic, celery and carrots for about 2 minutes. Reduce heat to low and add the parsnip and turnip then cover and let cook for about 5 minutes. Uncover and add the vegetable stock and water, stirring and just scrapping the deliciousness from the bottom. Bring to a boil, stir in the cumin, paprika, salt, black pepper and garlic powder then reduce to a simmer, cover and let bubble for 20 minutes. Uncover, stir in the Organic Chickpea Fusilli, red bell pepper and spinach. Let cook for about 15 minutes until the pasta is tender. Remove from heat, stir in the parsley and cover. Let sit for about 5 minutes so the flavors can meld together then DEVOUR.

Seviyan Kheer is a delicious dessert that typically made with tons of heavy cream, milk, vermicelli and butter. My Vegan version of #SeviyanKheer is a great alternative that is also figure friendly for those committed to their New Year’s Resolution

1 Box @explorecuisine Organic Red Lentil Spaghetti (broken in half)
¼ Cup Coconut Oil
1 Quart Unsweetened Coconut Milk
¼ Cup Currants or Raisins
¼ Cup Brown Sugar
1/8 Tsp Cardamom
1/8 Tsp Saffron

In a Medium Stock Pot over medium heat melt the coconut oil and gently toast the broken spaghetti for about 4-5 minutes. Add the rest of the ingredients and reduce heat to low and let simmer for about 20-25 minutes occasionally stirring. Garnish with pistachios, coconut, almonds then DEVOUR

½ Tbsp #Avocado Oil
4 Tbsp Minced Garlic
1 Diced Shallot
1.5 Cups #Vegetable Stock
1.5 Cups Unsweetened Soy Milk
1/8 Tsp Salt
1 Cup Frozen Peas

In a medium stockpot over medium heat lightly sauté the shallot and garlic for 2 minutes until softened and perfumed. Add the Vegetable Stock and Soy Milk and bring to a boil (should take about 5 minutes). Add the Chickpea Pasta (I broke in half just so I could fit in the pot), reduce heat to low and let simmer for 15 minutes. Remove from heat, stir in salt and frozen peas. DEVOUR

1 Cup Edamame – blanched and pods removed
1 Red #BellPepper - Julienne
1 Cup #Carrot – Julienne
1 Cup #BeanSprouts
2 #Scallions –sliced
1 Cup Purple #Cabbage – sliced
Handful of #Cilantro – rough chopped

Dressing
2 Tbsp Minced #Garlic
2 Tbsp Minced #Ginger
1/3 Cup #Avocado #oil
1/3 Cup #SoySauce
1/3 Cup #RiceWineVinegar
1/3 Cup #BrownSugar

Combine all the dressing #ingredients and refrigerate for at least an hour to let the #flavors enhance. Toss all the ingredients in dressing then DEVOUR

Ok so I’ve never made blondies before BUT OMFG @Plated Peanut Butter and Strawberry Jam Blondies with Peanut Crumble…mind blown…they’re basically a grown up version of the nostalgic Peanut Butter and Jelly Sandwich and super simple to make (they even included the pan!!)…love it..well love is probably an understatement…also, anyone see @Plated on @Sharktankabc (if you missed it you gotta check out the 1/7/2018 episode)

Just trying to be one of the cool kids 🤓 and keep up with this #2017bestnine thangggg👯‍♀️… the #blog started June #2017 and I can’t fully articulate to you how much of a #blessing 🙏🏼and how truly #grateful ❤️I am for all the #love and #support that #figonometry has been getting😍😍….blood, sweat, tears and tons of #wine🍷 (plus #coffee by the gallon!☕️) but my little passion #project that combined my love for #food 🥗🥘🥙🍦and #photography 📷 has blossomed this year and I intend on keeping up the momentum for #2018 💃🏻…this year in general has been rather hectic 🤯 for me, in addition to launching the #foodblog I also revamped my #business plan for my #accounting and #finance firm, started the #PhD program, went through a rather unnecessarily difficult #breakup, upped my #hiking game since my #dog is hot mess (and beyond #cute @marley_theminpin), and let’s not forget packing for my soon to be #move 🏃🏼‍♀️which is a mental marker that 2018 will be a new chapter in my life and great year ❤️❤️…I wish you all an amazing New Years 🍾🍾 full of #Happiness, Love, #Prosperity, #Safety and I know that every single #goal that you set for yourself this year you will #achieve .. ½ Cup Almond Flour
½ Cup Processed Pecans
12 Pecans for garnish
5 Tbsp Brown Sugar
1 Tsp Vanilla Extract
1/8 Tsp Salt
1 Egg White

Preheat oven to 350. Pulse the pecans, almond flour, brown sugar, vanilla extra and salt in the food processor until you get the consistency of coarse sand. Beat the egg whites in a stand mixture until you have stiff peaks then gently fold into the nut flour mixture. Divide the mixture into 12 and dollop mixture onto a parchment lined baking sheet and press a pecan onto the top of each cookie. Bake for 15-18 minutes
