Vegan baked Mac and cheese attempt... part 1. Ok... I had intended to make this from scratch, but got lazy and bought the Daiya #vegan cheese Mac box - and it wasn’t bad! Im used to my mom’s baked mac and cheese, and there’s definitely NO ♀️ comparison. This was a bit too cheese for me, so next time I’ll use less. I also sprinkled (too much) veggie cheese on top and baked it. But all in all, not bad. Next time I’ll use less cheese when cooking and baking. Hello #TacoTuesday •••• Sweet potato tacos with almond salsa from #Tasty (Altered to vegan) • Ingredients:
1 ½ lb sweet potato
1 bottle white wine, 750 ml
5 sprigs fresh thyme
5 sprigs fresh parsley
3 tablespoons (#vegan) butter, melted
3 cloves garlic
12 corn tortillas
12 oz (vegan) cheese
¼ cup toasted pine nut, or slivered almonds
1 cup scallions, green parts only, thinly sliced
Preheat oven to 425°F (220°C).
Trim and discard the tough green parts from the leeks, then cut them in in half lengthwise. Swirl in water to remove any sand. Pat dry.
On a large baking tray, place the leeks, sweet potatoes and garlic. Pour vegan butter and salt evenly over the vegetables.
Bake for 25 minutes.
In a large saucepan, bring the white wine, thyme and parsley to a boil and cook until it loses the raw alcohol smell, about 5 minutes. Reduce the heat to a bare simmer.
When the leeks are golden take both leeks and garlic off the tray. Place potatoes back in the oven for another 20 minutes.
Add leeks and garlic into the simmering wine sauce. Cook until leeks are tender, about 30 minutes.
Melt 2 tablespoons vegan butter in a nonstick skillet over medium-high heat. Pull the leeks from the cooking liquid, pat them dry and add to the butter to cook briefly on both sides, about 3 minutes total.
Remove the stem ends from the leeks and cut into 2-inch (5 cm) lengths.
For each taco, heat 2 tortillas on a griddle or in a large skillet over medium-high heat. Place 2 slices of vegan cheese next to them on the griddle. When the tortillas are warmed through, stack them on top of the cheese.
When the cheese has browned on one side, remove the tortillas and cheese to a plate, cheese-side up.
Add 2 to 3 strips of leek and some sweet potato. Spoon over 1½ to 2 teaspoons salsa and sprinkle with 2 teaspoons crumbled feta, a few toasted pine nuts, and 1 teaspoon minced green onions and serve immediately. Repeat using the remaining ingredients. Enjoy!!

Yesterday we spent the day at Epcot, and I woke up in pain as if I ran a marathon Why Disney why?!?! I almost didn’t make it to the gym this morning, but here I am struggling lol. So it turns out I need eggs in my life. Seems like the life of a #vegetarian is more suitable to me (minus cow milk). This was my struggle breakfast all weekend! The omelettes looked amazing and eggs have been the hardest thing to resist on this journey. I’ve adopted a plant based diet for about 2 months which is the longest I’ve ever gone without meat, fish, milk or eggs - which is a huge accomplishment for me! But I’ve learned a lot. Change takes time. I shouldn’t expect to transition over night. This journey is mine- no one else’s and I’m going to do it my way, no matter what others say. Interestingly, critics and trolls have tried to come at me. You would think people living this lifestyle would support those interested in learning and trying it out, but some just criticize and shame- it’s really weird ( trolls). Anyways, it’s my journey and I’ll take my time. Some people take years to fully transition while others can do it it a few months. Everyone is different. All I know is that my morals and beliefs will guide me and I’ll do this on my time. I do not have to define my journey with a single term. I’ve decided to stay away from all meat products and cow tit juice (I’m convinced if everyone used this term instead of milk no one would drink it ) because I believe the dairy industry is disgusting and cruel ...but I will eat eggs, because.... I love eggs... that’s it lol. Sure I’ll buy organic free range and try to stick to egg whites, but no promises I’m a vegetarian that doesn’t drink milk ♀️ - The technical term is Ovo vegetarian. Well, I guess that’s me... for now.

Happy Thanksgiving #fitfam !!! • One easy way to improve your Thanksgiving dinner plate (and still have all your favorites) is to start with the green veggies. Put the green beans and the salad on your plate first. Then, add the turkey (aim for the the skinless pieces if you can find them), and then add on your other favorites. ~The typical Thanksgiving plate is high in carbs and there’s lot of sugar and fat. Especially saturated fat. There’s butter everywhere and hardly any fiber. After eating this plate, you’ll feel stuffed and bloated. And this doesn’t even take into consideration the pie. Or the wine. Or seconds…or thirds. (And there's always seconds... and wine lol). A little change can make a big difference! • Don’t forget to work out today... and tomorrow!! This year was about conquering fears. Many of you may not know, but before this month, I couldn’t swim and was afraid of drowning. I started taking a swim class but I only got this far because of my coach and partner @ronniedunston (an excellent swimmer). Not only did he teach me techniques and how to be comfortable in the water, he put up with me complaining and whining every time a little bit of water got in my nose Honey... you the real MVP! Here, I’m practicing back floating, free style and breathing. I still need a lot of work, but at least now I know if I’m thrown in the deep end, I won’t die. #missionaccomplished
