#StPatricksDay is a global celebration of Irish culture on or around March 17. It particularly remembers St Patrick, one of Ireland's patron saints, who ministered Christianity in Ireland during the fifth century. For all of you who didn't know It is actually a religious holiday. Funny how so many are against religion unless it suits them. I guess because we drink it's ok to celebrate a Christian holiday. Lmao....who's drinking with me tonight?

2 1/2 c. Pineapple
1 1/2 c. Mango
1 handful of sweet mint
2 tbs. Lime juice
2 c. White vinegar
1 tsp. Salt
Mix all ingredients in food processor till smooth. Put in pan to simmer on low for 20 mins or so. Cool. Straining is optional. Pour into bottles. #enjoy

4 c. Mango
1 1/2 c. Hot lemon pepper
4 habenero pepper ( I used orange )
6 tbs. Pectin
2 tbs. Lemon juice
2 c. Sugar
Add all ingredients into pan except sugar. Bring to rolling boil. Stirring occasionally. Add sugar. Bring back to boil. Stirring constantly for one minute. Remove from heat. Cool a Liitle. Place in sterilized jars and refrigerate. You want them to cool a little because they will be hot.

Recipe: 3 c. Star fruit (finely chopped) 1 c. Sugar 1 tbs. Lemon juice 3 habenero peppers (finely chopped) 3 tbs. Honey Lemon zest
Directions: 1. Add first 3 ingredients to a small sauce pan on med. high heat. Bring to boil. 2. Add in remaining ingredients. Boil for an additional 15 mins. Stirring occasionally. 3. Remove from heat.
To test for readiness have a pre chilled plate in the freezer. Place a small amount on chilled plate and return to freezer for 2 mins. If jelly is thick and stays when pushed with a spoon, it's ready. Place in a pre-sanitized jar and you're done. #enjoy
