NEW RELEASE Gertrudes dos Santos, Brazil
Gertrudes is the elder of three siblings; she was the one who started Specialty Coffee in her region in 2006. Her brothers Joao Hamilton and Ivan dos Santos gained fame with Sitio Canaa and Novo Canaa, two coffees we have been working with in the past - and this season as well.
Gertrudes did not accept that her coffees did not score well back in 2006. Her first investment was a treadmill ‘to become an athlete’. She now leads with best practice, state of the art equipment and processing methods. Gertrudes and her husband Celso do not use agro-toxic chemicals on their soil and all picking is done selectively by hand.
Our red bourbon microlot is outstanding with notes of caramel, orange blossom and red grapes. The mouthfeel is silky with a lingering aftertaste.

We pay high attention to the quality of green beans we are buying. They have to score 86 points and up, they are always fresh in season and from fully traceable, sustainable farming. Our farmers learn, progress and get paid a premium for quality. The total output of quality coffees from our farmers is going up every year - simply by applying standards that push their cup quality up. Farmers are segmenting their coffees by qualities, microlots, processing. There is a market for every quality segment of a farms harvest. Lower grades are going to different buyers that are looking just for that to put into their blends. Nothing goes to waste if the farms are promoted as we do it here at THE BARN. We give all our farmers a face to the market, highlighting their specific terroir and flavour by producing Single Origin coffees only - roasted and served with perfection.

Launching: Sambewe PB, Tanzania
Our peaberry microlot is coming from a group of 54 farmers who are organized as an Agriculture Cooperative Society. The cup profile is complex with flavours of raspberries, cherries, raisins, a hint of spices. High sweetness with notes of vanilla. The mouthfeel is juicy with a black tea finish.
Parts of this coffee´s proceeds goes to project "Coffee Club". High school students are given seedlings to be planted on their parents farms. They get guidance and are educated on how to nurture and look after their plants, as well as agronomy and accounting training.

By the time our green beans are reaching this final sorting belt they have passed many stages of control and segmentation: handpicking at the perfect point of ripeness, water / weight channeling to check maturation, daily sorting out on raised drying beds for damage, disease, ripeness, moist control for even drying, various sorting levels at the dry mill for instance stones, metall, colour reading and screen sizes. Then our beans reach this belt. Assuming thorough work that far we then evaluate the cup quality and score the coffees. This video was shot in Ethiopia. We are on the way to Costa Rica, Honduras and Guatemala right now to visit our sourcing partners there.

Last summer we received a unique letter by a 81-year-old lady called Mathilde Jägers, created on a classic type-writer. Inquiring about celebrating her birthday at Cafe Kranzler but concerned about her fitting into a modern clientele. The letter was so nicely written that we responded immediately saying that everybody is welcome and that taste for quality goes through all ages or fashion. Today we learned that Frau Jägers does not exist but a little booklet was published with all responses she received. Worth a read over Valentines - enjoy!

Master of Ceremony. We are about to start a new skillset level that our staff can train towards. To give the art & ceremony of hand-brewed coffees an even stronger place on our bars our staff can now train up over three months to reach this title. Our head of training & education, Maddy Kinmond, is coaching our candidates to reach a high level of brewing techniques, beanology and finest execution on bar. Staff passing the final tests will be empowered with skills, teaching capacity - and better pay. Share knowledge, spread quality.

Join us at our Launch Afternoon on Valentines Day to celebrate our collaboration with Paper & Tea, Berlin.
We proudly present our new signature drink. A fusion of two quality products: Coffee and Tea. Our baristas tested a wealth of teas by our partner, Paper & Tea to find the perfect match. We searched for a Rooibos base with rich spices to create a puristic drink that would give the taste sensation of a Chai Milk drink without any artificial additives. We pulled our Espresso coffee together with P & T´s ground spiced Rooibos tea mixture into one perfectly extracted shot. Adding steamed milk by happy cows out of Brodowin, we found a perfect balance of tea, spices, coffee and sweetness, almost like melted ginger bread.

We have started offering raw beans to buy in smaller quantities for home roasting or green bean infusions. First up is our microlot from Marcos Limongi in Sao Paulo, Brazil. The cultivar is Mundo Novo. Originated in Brazil as a natural hybrid by Sumatra and Red Bourbon. This varietal is best suited to Brazil climate and offers high yield, disease resistance and complex flavours. Enjoy!
