Easy meal prep this week because I only needed food for two workdays. Heading to the @ntatraining conference on Wednesday & not sure how I'm going to deal with 40 degree weather with relentless rain [& possible snow], but I digress. 🥑

I eat both breakfast & lunch at work, so that's what I prep. Trying to get back into the groove of non-breakfast breakfast because I've been way too reliant on carby things lately [read: sugar] & it isn't making me feel too great. So tomorrow & Tuesday it's avocado, broccoli ala @dianesanfilippo, sauerkraut, tostones, & an @epicbar [they don't know I'm cheating on them with EPIC bites yet. See my post from yesterday if you're confused.]. For lunch I'm having tacos with @thepaleomom 's cassava tortillas, avos that will become guac, red cabbage, & Cocoyo ie. Paleo sour cream. Also all the booch [which my phone autocorrected to hooch]. 👍🏼 Lazy person's guide [aka my guide] to washing a cabbage: peel off the first few layers. Done. 😂

This amazing chocolatey goodness saved my butt all weekend.👌🏻🙌❤️ It can be so hard when you are on the road, in random places, you get so out of routine it's not funny. 😑😬 I made up 2 lots of overnight oats like this in my trusty soup cup & was all set for a filling, nourishing breakfast.

Recently my husband and I had a disagreement and I noticed the feeling I was having afterward was disrespected. One of my coaches challenged me to turn that feeling back on myself and notice how I am disrespecting myself. .

What came to mind immediately is that I never make time for fun things. I love doing group fitness classes but I don’t make time for it in my schedule. I love walking the dog and being outside and that has begun to dwindle recently. .

Vegan Mac and Cheese Sandwiches by @aveganfeed⠀
Recipe⠀
Serves 3⠀
Ingredients⠀
1 1/2 cups shredded vegan cheese ⠀
1-2 cup plant milk⠀
1 T vegan butter⠀
Garlic powder, stock powder, paprika, salt and pepper to taste⠀
1 tablespoon chopped parsley ⠀
1 1/4 cup cooked macaroni ⠀
6 slices bread⠀
Extra vegan butter⠀
Tomato sauce⠀
⠀
Method⠀
Combine vegan milk, cheese, butter and seasonings in a pot. Cook on low and mix regularly until cheese has melted. Mix in parsley and cooked macaroni, turn off heat. ⠀
Spread vegan butter on both sides of each slice of bread. Place in a pan on medium heat and cook on both sides until golden brown. ⠀
To assemble, spread tomato sauce on one slice of bread, add 1/3 macaroni mixture and spread evenly, top with another piece of bread. Repeat for remaining sandwiches. Enjoy!⠀

Chocolate and Raspberry Protein Cupcakes(7 cupcakes) 💥Easy to make, delicious, high in protein and low sugar, only 119kcal per cupcake. Sounds good isn't?
INGREDIENTS :
▪️3 eggs
▪️50g protein powder
▪️200ml almond milk
▪️100g oats
▪️1 tsp cocoa
▪️1/4 tsp to bicarbonate of soda
METHOD:
Preheat the oven to 220°C.
Mix all the ingredients together until well combined, smooth and lump-free.
Spoon two heaping tablespoons of mixture into each cup followed by 2 raspberries and one dark chocolate square. Top with 1 heaping tablespoon on the mixture spreading to ensure raspberries and chocolate are fully covered. Add on the top of each cupcake one raspberry and crushed dark chocolate.
Bake them for 20 minutes.
Use a cake taster or skewer to test the middle of the cupcakes come out clean. If not bake for a further 5 minutes.
👏👏👏 And now... time to enjoy them 🤤❤️
