Gestern ist ein neues tolles Rezept für Overnight Oats auf meinem Blog online gegangen und ich habe total vergessen es mit euch zu teilen 🙈 Zu Gast war diesmal @eattrain.befit bei mir und hat das Rezept mitgebracht. Hüpft mal rüber 😊

CARROT CAKE OVERNIGHT OATS:
-
Place raw oats (45g), cinnamon + ginger powder (quantity according to preference), chia seeds (1 teaspoon), sesame seeds (1 teaspoon), linseeds (1 teaspoon) and salt (pinch) in a bowl.
Fill with enough water to cover the oats with about 1 cm above the level of the oats.
Add two tablespoons of Greek yoghurt and one raw egg white. Add one to two finely grated carrots.
Optional: add honey or xylitol (about one teaspoon) to sweeten.
Stir the mixture until homogenous.
Top with finely sliced banana (x 1), strawberries (x 4ish) and blueberries (x 6ish).
Cover the bowl with cling film and put in the fridge overnight.

The mixture makes quite a lot so you can either eat about half for a meal or, like I do if I'm intermittent fasting and have one large meal in the day, eat the whole thing. Totally up to you and the size of your appetite. 🤷🏻‍♀️

Oat, pumpkin seed & fruit bars/flapjacks 😍 This is of course the British version of flapjack - a sweet oat tray bake. I've replaced most of the sugar and syrup with fruit and the fat with applesauce, producing a chequer less crunchy bar that's more like a granola bar. Whatever it is, it's tasty! Soak 1/4 cup dried pitted dates and 1/4 cup dried figs in 1/2 cup boiling water for 10 minutes. Blend/process to a smooth syrup. In a separate bowl, mix 2 cups oats, 1/4 cup protein powder (or more oats), 1/4 cup brown sugar and 1/4 - 1/2 cup pumpkin seeds. Fold in the date syrup and 1 cup applesauce, plus any flavourings you like such as vanilla extract. You can also stir in extras like dried fruit, nuts or chocolate chips. Flatten oat in a lined brownie tin and bake at 180c (355f) for about half an hour or until lightly browned. Once cooled, lift from the pan and cut into 8-10 pieces. Enjoy as is or drizzle with melted chocolate.
