Made the "omelette with smoky garlic mushrooms" from this month's @veganfoodandliving magazine. First attempt so not as beautiful as it could have been. But darned tasty! Oh and in the absence of mushrooms we used kale! Yummy brunch!

Vegansk kladdkaka! Så kladdig och good!😍🍫🍫 Recept
2dl strösocker
2 dl brunsocker
2 dl kakao
1,5 dl olja
1/2 tsk bakpulver
1 nypa salt
1tsk vaniljsocker
2dl vetemjöl
2 dl vatten
150g krossad mörk choklad

Gör såhär: Sätt ugnen på 180grader. Rör ihop strösocker, brunsocker, kakao och olja. Tillsätt resterande ingredienser och krossad mörk choklad. Häll över smeten i en 20x30 form klädd i bakplåtspapper. Toppa kakan med lite krossad choklad. Grädda i mitten av ugnen i ca 20min (kan behöva gräddas längre eller kortare beroende på ugn - så håll koll efter 15min!)

Garden to Omelette kind of BRUNCH. 🔆

Fresh radishes , spinach, celery leaves, parsley and rocket helped fill up my egg-less omelette earlier today. Every time I harvest only what I need for a specific meal it makes my heart so happy to know I'm eating sustainable and not letting anything go to waste. 😁 .
.
Gardening has become such a good method of therapy for me , whenever I feel a bit down in the week I'll go out and everytime I see a new tomato or blueberry that has popped out and blessed my garden with its presence , it makes me so grateful and happy.
It's important to find joy in the small things life has to offer us.✨ What's your weird therapy sesh thing ? 😂

Fill up your omlette with whatever you like ( little guidance under breakfast highlight reel). I always have the "pre - mix " in my fridge stored in a jar ready for whenever.

•EGG-FREE OMELETTE MIX•
( 6 servings )
• 1 1/2 cup chickpea flour
• 3 tbsp flax seeds, ground
• 1/2 tsp tumeric
• 1 tsps cumin, ground
• 1 tsp salt
• 1 tsp black pepper
• 1 1/2 tsps baking powder
1. Mix all the ingredients and store in a jar for whenever you feel like having an omelette.

MAKING 1 OMELETTE:
•1/3 cup omlette mix
• 1/3 almond milk/water (milk -better taste & texture)
• 1 tbsp fresh parsley,chopped (optional) .

1. In a small bowl mix 1/3 cup omelette mix with almond milk and set aside to thicken.
2. Sauté all the filling ingredients except for avo and spinach until broccoli is a vibrant green but still crunchy.
3. Pour omlette batter in a small non-stick pan over medium- high heat.
4. When almost totally dry on top flip over and put filling onto omelette with spinach.
5. When the other side is done, add avo and then flip over the one half over the filling.

Posted some winter pics in my stories. It is amazingly beautiful outside, like diamonds sparkling on branches 💎❄️💎. Day started in a perfect way as a Finn took olympic gold in mens 50km cross country! Boy we cheered in our living room during the last kilometres 😂. To celebrate I'm went skiing with kids today - no better way right?

Got inspired to do this soup by @kodinkuvalehti but used my own recipe 💖. Recipe for the soup:
1-2 parsnips
2 big potatoes (the quality used for mashed potatoes = low starch)
1 onion or 2 shallots
1-2 garlic cloves
Olive oil
Thyme
1-2dl white wine
Salt and pepper
Vegetable stock
2dl cooking cream (oatbased)
1 box =170g cooked giant beans @gogreennordic (To garnish: pea sprouts, radishes, nuts and seeds and perhaps some homemade sweet potato crisps 💛.)
Cut the parsnips and potatoes to cubes and roughly chop the onions. Sauté the vegetables in olive oil and add the stock, some thyme and white wine. The veggies should be totally covered with the broth. Boil until the potatoes soften. Add the white giant beans and puree the soup. Add cooking cream and season. Bring to boil and serve 💞.

Fried rice with beans and peas🌱🍴 Perfect for lazy saturdays because it's qick and easy but delicious at the same time😊

Recipe (2 servings):
Ingredients:
2 tbsp olive oil
3/4 cup kidney beans
Salt, pepper, lemon juice, ground paprika
3/4 cup peas
1 cup rice
2 cups vegetable broth

Method: First sauté the kidney beans with the olive oil and spices.
Then stirr in the peas, rice and vegetable broth. Bring to a boil and let simmer until the liquid is completly absorbed.
Enjoy!
