Say "Mini Frittata!"... LOL. Start your day with a frittata made with wild mushrooms, sauteed spinach, roasted butternut squash and preserved tomato coulis. Can't forget the fontina and cheddar!!! Completed plate has LowBrau chicken/ feta/walnut sausage, roasted local potatoes and caramelized onions. Keep it simple.
2 years ago I was part of an incredible experience by offering the NFL it's first true Farm-to-Fork Super Bowl on an important anniversary. Serving the celebrities and massive crowds for the NFL on Location events for Super Bowl 50 definitely helped me become who I am today. Always executing at a high level/high volume to help lead my culinary team to success is dire. From creating the foundation and systems with the KG TEAM of Golden 1 Center to my new home of UC Davis Medical Center- supporting the local farmers and ranchers of our area with their quality bounty will always be my focus. Prepping for the day and using all parts of the vegetables to fully exploit the layered flavors that can develop. Much of the time scratch cooking starts with stocks. Never forget the basic fundamentals. Put in the work and people will taste the difference in the end product.
