Got a winner of a #MeatFreeMonday dish here, mushroom & cauliflower penne with a hit of chilli and lots of loverly herbs to liven it up.
Not only does it taste good, cauliflower is also a great source of vitamin C. Cook the cauliflower until tender, then mash it into a gorgeously silky sauce. Keep it veggie-friendly by using veggie Parmesan. Get the recipe in my bio.
Super sweet potatoes make a great substitute for white potatoes. Not only do they taste delicious, they also give us an extra health boost! They’re a non-starchy carb, meaning they count towards our 5-a-day, plus give us loads of nutrients including the mighty vitamin C. Guys, this pork roast is seriously tasty! It's a classic from my 2002 cookbook, Jamie's Kitchen – swipe left for a throwback! I'm talking perfectly golden crackling, tender, juicy meat and a herby pine nut stuffing – what a combo! Having super-tender fall-off-the-bone pork ribs, shining with a sticky Chinese glaze, always excites me. These little beauties are something to really get stuck in to, so don't be afraid to get your hands and face absolutely covered in sauce!! Now this is a burger that's totally ok to have on a Monday. it's my mega veggie burger from Everyday Super Food. Good old rhubarb and homemade custard with the best crumbly shortbread. You just can't beat it. I've used balsamic vinegar in my recipe to really flavour my rhubarb.
