So all of my pre-wedding festivities are wrapped up! I had an unforgettable bachelorette party in New Orleans and 3 special bridal showers. I wanted to thank everybody that helped me celebrate. It means the world to me! I can’t wait to have these two ladies stand next to me on my big day. 40 more days until the wedding!
Happy Saturday! Have you all tried @capriottisedina yet? 🥪 They have more than just delicious sandwiches. Here is the black & bleu salad made with homemade roast beef, mixed greens, gorgonzola cheese crumbles, sweet peppers, crispy fried onions, diced tomatoes, and gorgonzola vinaigrette!
Start your St. Patrick’s day party early! Today is Luckypalooza and West 7th in St. Paul will be blocked off for the celebration. There will be food, drinks and mechanical bull rides from 2-11pm. I’m feeling festive with this cupcake from @nadiacakescupcakes! I hope to see you all there!
This po boy sure put a DENT in my appetite! Last Sunday @henryhalfshell was serving up fried oyster and andouille sausage po boys. 🥪 I was probably devouring this sandwich as somebody backed into my parked car and drove away. But this po boy was SMASHING! I’ve been on my Cajun food kick so it was a pleasant surprise to find somebody shucking oysters and making po boys at @blackstackbrewing.
Dinner has been served by me! ♀️ Here is my homemade Mexican shrimp cocktail AKA coctel de caramones. It’s easy to make and refreshing.
I diced up 2 tomatoes, 1/2 of a small white onion, 1 avocado, and some cilantro. I put the ingredients into a large bowl and mixed in fresh lime juice. Then I boiled a pound of shrimp in water and added a tablespoon of minced garlic. I used enough water just to cover the shrimp in the pot. After the shrimp was cooked, I added salt, pepper, cholula hot sauce, and ketchup to taste. I added probably about 1/2 a cup of ketchup. If I have cocktail sauce on hand, I’d add it to the mixture as well. I then pour the shrimp cocktail mixture into the bowl of diced veggies. This dish is served chilled with saltine crackers or tostadas.
I am super happy that I ended up at @blackstackbrewing and @cancanwonderland this afternoon because @henryhalfshell is serving up oysters and po boys every Sunday! Today the special is blue point oysters from Massachusetts - $2 each. Good beer, good food and fun arcade games all in one building! 🥪
